Six Bechamel Sauces

Instructions

  1. Mornay Sauce: whisk in grated Gruyere cheese over extremely low heat.
  2. Soubise Sauce: sweat some onions, blend them together with the bechamel in a blender, serve with lamb.
  3. Mustard Sauce: whisk in some mustard, black pepper, and finely chopped tarragon, then serve with chicken.
  4. Aurora Sauce: mix with some marinara and serve with pasta. Drizzle with oil and garnish with basil leaves.
  5. Horseradish Sauce: whisk in grated fresh horseradish, creamed horseradish, black pepper and a touch of vinegar, then serve with steak.
  6. Parsley Sauce: add some lemon juice and finely chopped parsley and serve with fish.
